I love the newsletter today on hashbrowns and I've worked on the "perfect" hashbrowns for years!!! I can't stand store bought frozen hashbrowns when it is so easy to make them from scratch. I have found that if I'm making breakfast for a crowd...I start the night before. I peel the potatoes and shred them into a bowl of water. I drain the water really good and cook them just about 1/2 way, cool and put them in a gallon bag. The next morning, they will cook with far less oil (I actually use spray butter)and then you can add your seasonings. Love those hashbrowns and fried potatoes and baked potatoes and mashed potatoes and scalloped hehehehe - thank for the great article!!!
